People have been asking me for recipes for healthy and delicious food. Apparently making your mouths water on Instagram isn’t good enough. So I’m gonna start sharing my meals with you!
I am obsessed with delicious food, but don’t want my waistline to look like it. That means I try new recipes all the time to find things that satisfy my taste buds and my bathroom scale. It turns out it’s not that hard to eat healthy and still have amazing flavor! If you cook along with me, I can guarantee that you will feel good about what you’re eating and try all kinds of new things. I’m so excited to open up my kitchen to you!
What’s for dinner?
First up, Thai Shepherd’s Pie with Pumpkin Cauliflower Mash. There’s so much going on in that name I don’t know where to start! Shepherd’s Pie is totally a comfort food for me. It’s one of those dishes that I remember my mom making when it was cold out and we were in the mood for something snuggly (because I would totally climb into a bathtub full of meat and potatoes) and satisfying.
This recipe is a huge twist on the classic that I grew up with. Red curry paste (not spicy, don’t worry), lime juice, and coconut milk give it an amazing, exotic Thai flavor. The topping is made lower carb by replacing the mashed potatoes with cauliflower and pumpkin, which also makes it super appropriate for the season (pumpkin everything, please and thank you)! Pumpkin is also a great source of vitamin A, so you’re getting an extra health kick, too.
I wasn’t sure what to expect when I started cooking this, but I could have eaten the whole pan! It’s so tasty and satisfying, you’ll never go back to Worcestershire and potatoes!
