If you read my last post, you know that I’ve been struggling to stick with my meal plans. I can justify my Seoul Taco dinner by saying that the Olympics are in South Korea and I was trying to get into the right mindset, but I was really just being lazy (although it was delicious!). Check out my post from earlier this week to find out what changes I’m making to my routine to defeat my mid-week laziness!
So here are the two things I actually made last week…with hope that I will be more successful next week!
Breakfast & Snacks
- Dark Chocolate Raspberry Coffee Cake from Sally’s Baking Addiction
So tasty. A little over-indulgent to eat for breakfast everyday, but I’ll definitely remember this recipe the next time I’m making brunch for family and friends.
Lunch & Dinner
- Creamy Basil Pesto Tetrazzini from Whole and Heavenly Oven
This recipe came together so quickly! Pre-cooked chicken and jarred pesto make this an easy to throw together meal for any night of the week. It also makes a TON of food, so it’s great if you’re feeding a crowd. You could easily throw in extra veggies to up the healthy factor.
