This protein packed breakfast keeps me feeling full until lunch. The next time I make these, I think I’ll whisk the eggs so they mix into the potato better and maybe add a little bit of bacon to balance the sweetness. And lesson learned, when they say to grease the pan well, they aren’t kidding! I used muffin liners and wish I had sprayed them with non-stick spray, but oh well, still tasty!

Lunch and Dinner
I don’t actually make separate items for lunch and dinner. I make something for dinner and just eat the leftovers for lunch and dinner until it runs out.

There are so many veggies in this dish that you can eat a huge portion guilt-free.

Enchiladas are one of my favorite foods. I’ve tried so many different recipes over the years and this is definitely one of my favorites! There is nothing I would change. I made the enchilada sauce over the weekend to save time during the week and used frozen broccoli because chopping broccoli is annoying. So much delicious. If you make nothing else in this post, make these. Your tummy will thank you.
